A comforting and flavorful Thai prawn curry that is easy to prepare.
Ingredients

- 500g prawns, peeled and deveined
- 1 tablespoon vegetable oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tablespoon Thai red curry paste
- 400ml coconut milk
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- 1 red bell pepper, sliced
- 1 cup fresh spinach
- Juice of 1 lime
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a pan over medium heat.
- Add the chopped onion and minced garlic. Cook until soft.
- Add the Thai red curry paste. Stir well and cook for 1 minute.
- Pour in the coconut milk and stir to combine.
- Add the fish sauce and brown sugar. Mix well.
- Add the prawns and cook until they turn pink.
- Add the sliced bell pepper and spinach. Cook until the vegetables are tender.
- Remove from heat and stir in lime juice.
- Garnish with fresh cilantro before serving.
Notes
- You can substitute prawns with chicken or tofu for a different protein.
- Adjust the curry paste to control the spice level.
- Use vegetable broth instead of fish sauce for a vegetarian option.
