Description

A comforting and flavorful Thai prawn curry that is easy to prepare.


Ingredients

  • 500g prawns, peeled and deveined
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon Thai red curry paste
  • 400ml coconut milk
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 red bell pepper, sliced
  • 1 cup fresh spinach
  • Juice of 1 lime
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a pan over medium heat.
  2. Add the chopped onion and minced garlic. Cook until soft.
  3. Add the Thai red curry paste. Stir well and cook for 1 minute.
  4. Pour in the coconut milk and stir to combine.
  5. Add the fish sauce and brown sugar. Mix well.
  6. Add the prawns and cook until they turn pink.
  7. Add the sliced bell pepper and spinach. Cook until the vegetables are tender.
  8. Remove from heat and stir in lime juice.
  9. Garnish with fresh cilantro before serving.

Notes

  • You can substitute prawns with chicken or tofu for a different protein.
  • Adjust the curry paste to control the spice level.
  • Use vegetable broth instead of fish sauce for a vegetarian option.
