- 1 lb ground beef
- 1 onion, chopped
- 2 cups mixed vegetables (frozen or fresh)
- 1 can (15 oz) diced tomatoes
- 1 can (10.5 oz) cream of mushroom soup
- 2 cups shredded cheese
- 1 cup cooked rice
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium heat.
- Add the chopped onion and cook until soft.
- Stir in the mixed vegetables, diced tomatoes, and cream of mushroom soup.
- Mix in the cooked rice, and season with salt and pepper.
- Transfer the mixture to a baking dish.
- Top with shredded cheese.
- Bake for 30 minutes or until the cheese is bubbly and golden.
Notes
- You can substitute ground turkey for a leaner option.
- Use any vegetables you have on hand.
- For a vegetarian version, omit the beef and add more vegetables or beans.
- This dish can be made ahead and frozen for later use.
