Ingredients

- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cans (14.5 ounces each) diced tomatoes
- 2 cups vegetable broth
- 1 teaspoon sugar
- Salt and pepper to taste
- 1/4 cup fresh basil, chopped (or 1 teaspoon dried basil)
- 1/2 cup heavy cream (optional)
Instructions
- Heat olive oil in a pot over medium heat.
- Add chopped onion and cook until soft.
- Add minced garlic and cook for 1 minute.
- Pour in the diced tomatoes and vegetable broth.
- Add sugar, salt, and pepper.
- Bring the mixture to a boil, then reduce heat and simmer for 20 minutes.
- Add fresh basil and stir.
- If using, stir in heavy cream before serving.
Notes
- Substitute olive oil with butter for a richer taste.
- Use chicken broth instead of vegetable broth for non-vegetarians.
- For a dairy-free option, skip the cream or use coconut milk.
