Ingredients

- 8 oz spaghetti
- 1 lb shrimp, peeled and deveined
- 2 cups fresh spinach
- 1 can (14 oz) diced tomatoes
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- Salt to taste
- Black pepper to taste
Instructions
- Cook spaghetti according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add minced garlic and sauté for 1 minute.
- Add shrimp and cook until pink, about 3-4 minutes.
- Stir in diced tomatoes and Italian seasoning. Cook for 5 minutes.
- Add fresh spinach and cook until wilted.
- Toss in the cooked spaghetti and mix well.
- Season with salt and pepper to taste.
- Serve warm and enjoy.
Notes
- You can substitute whole wheat spaghetti for a healthier option.
- Use frozen shrimp if fresh is not available.
- Spinach can be replaced with kale or any leafy green you prefer.
- For a vegetarian option, omit shrimp and add more vegetables.
