A comforting traditional beet soup that warms the soul.
Ingredients

- 4 medium beets, peeled and diced
- 1 onion, chopped
- 2 carrots, chopped
- 3 potatoes, diced
- 4 cups vegetable broth
- 2 tablespoons olive oil
- 2 tablespoons vinegar
- Salt to taste
- Pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and sauté until translucent.
- Add carrots and cook for 5 minutes.
- Add beets and potatoes to the pot.
- Pour in vegetable broth and bring to a boil.
- Reduce heat and simmer for 30 minutes or until vegetables are tender.
- Add vinegar, salt, and pepper to taste.
- Blend soup until smooth if desired, or leave it chunky.
- Serve warm, garnished with fresh herbs if you like.
Notes
- You can substitute vegetable broth with chicken broth for a different flavor.
- Add a dollop of sour cream or yogurt for creaminess.
- Use frozen beets if fresh ones are not available.
