Ingredients

  • 4 medium beets, peeled and diced
  • 1 onion, chopped
  • 2 carrots, chopped
  • 3 potatoes, diced
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 2 tablespoons vinegar
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and sauté until translucent.
  3. Add carrots and cook for 5 minutes.
  4. Add beets and potatoes to the pot.
  5. Pour in vegetable broth and bring to a boil.
  6. Reduce heat and simmer for 30 minutes or until vegetables are tender.
  7. Add vinegar, salt, and pepper to taste.
  8. Blend soup until smooth if desired, or leave it chunky.
  9. Serve warm, garnished with fresh herbs if you like.

Notes

  • You can substitute vegetable broth with chicken broth for a different flavor.
