  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, heat the olive oil over medium heat.
  3. Add the onion, carrots, and celery. Cook until soft, about 5 minutes.
  4. Add the garlic and cook for another minute.
  5. Stir in the lentils, diced tomatoes, broth, cumin, thyme, salt, and pepper.
  6. Bring the soup to a boil, then reduce the heat and simmer for 30-35 minutes until lentils are tender.
  7. Adjust seasoning if needed and serve warm.
