Ingredients

- 1 cup dried lentils
- 1 medium onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 can diced tomatoes (14 oz)
- 6 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Rinse the lentils under cold water and set aside.
- In a large pot, heat the olive oil over medium heat.
- Add the onion, carrots, and celery. Cook until soft, about 5 minutes.
- Add the garlic and cook for another minute.
- Stir in the lentils, diced tomatoes, broth, cumin, thyme, salt, and pepper.
- Bring the soup to a boil, then reduce the heat and simmer for 30-35 minutes until lentils are tender.
- Adjust seasoning if needed and serve warm.

- You can use any type of lentils you have on hand.
- Feel free to add other vegetables like spinach or kale for extra nutrition.
- This soup freezes well, making it great for meal prep.
