Ingredients

  • 2 celery stalks, chopped
  • 4 cups vegetable broth
  • 1 cup coconut milk

  • Salt to taste

  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat a splash of water over medium heat.
  2. Add the onion, carrots, and celery. Sauté until softened, about 5 minutes.
  3. Add the diced potatoes and vegetable broth. Bring to a boil.
  4. Reduce heat and simmer until the potatoes are tender, about 15 minutes.
  5. Stir in the coconut milk, garlic powder, salt, and pepper.
  6. Use an immersion blender to blend the soup until smooth, or carefully transfer to a blender in batches.
  7. Serve warm, garnished with fresh parsley.
