A warm and comforting vegan potato soup that is easy to prepare and perfect for any meal.

			- 4 large potatoes, peeled and diced
 - 1 onion, chopped
 - 2 carrots, sliced
 - 2 celery stalks, chopped
 - 4 cups vegetable broth
 - 1 cup coconut milk
 - 1 teaspoon garlic powder
 - Salt to taste
 - Pepper to taste
 - Fresh parsley for garnish
 
Instructions
- In a large pot, heat a splash of water over medium heat.
 - Add the onion, carrots, and celery. Sauté until softened, about 5 minutes.
 - Add the diced potatoes and vegetable broth. Bring to a boil.
 - Reduce heat and simmer until the potatoes are tender, about 15 minutes.
 - Stir in the coconut milk, garlic powder, salt, and pepper.
 - Use an immersion blender to blend the soup until smooth, or carefully transfer to a blender in batches.
 - Serve warm, garnished with fresh parsley.
 
Notes
- You can substitute any vegetable broth with water and seasonings.
 - For a thicker soup, add less broth.
 - Feel free to add other vegetables like spinach or kale for extra nutrition.
