			- 2 tablespoons olive oil
 - 1 onion, chopped
 - 2 carrots, diced
 - 2 celery stalks, diced
 - 3 cloves garlic, minced
 - 1 zucchini, diced
 - 1 bell pepper, chopped
 - 1 can (14 oz) diced tomatoes
 - 4 cups vegetable broth
 - 1 teaspoon dried basil
 - 1 teaspoon dried oregano
 - Salt and pepper to taste
 - 1 cup green beans, trimmed and cut
 - 1 cup spinach, chopped
 
Instructions
- Heat olive oil in a large pot over medium heat.
 - Add onion, carrots, and celery. Cook until the vegetables soften, about 5 minutes.
 - Add garlic and cook for another minute.
 - Add zucchini and bell pepper. Stir to combine.
 - Pour in diced tomatoes and vegetable broth.
 - Add dried basil, oregano, salt, and pepper. Bring to a boil.
 - Reduce heat and simmer for 20 minutes.
 - Stir in green beans and spinach. Cook for another 5 minutes.
 - Serve warm and enjoy.
