Ingredients

  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 zucchini, diced
  • 1 bell pepper, chopped
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup green beans, trimmed and cut
  • 1 cup spinach, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until the vegetables soften, about 5 minutes.
  3. Add garlic and cook for another minute.
  4. Add zucchini and bell pepper. Stir to combine.
  5. Pour in diced tomatoes and vegetable broth.
  6. Add dried basil, oregano, salt, and pepper. Bring to a boil.
  7. Reduce heat and simmer for 20 minutes.
  8. Stir in green beans and spinach. Cook for another 5 minutes.
  9. Serve warm and enjoy.
