- 2 cups cooked chicken, shredded
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (4 oz) diced green chilies
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup sour cream
- 1/2 cup shredded cheese (optional)
Instructions
- In a large pot, sauté onion and garlic until soft.
- Add shredded chicken, beans, green chilies, chicken broth, cumin, chili powder, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Stir in sour cream and cheese until melted and creamy.
- Serve warm, garnished with fresh herbs if desired.
Notes
- You can use rotisserie chicken for convenience.
- Substitute Greek yogurt for sour cream for a healthier option.
