Ingredients

  • 200g udon noodles
  • 4 cups vegetable broth
  • 1 cup sliced mushrooms
  • 1 cup chopped bok choy
  • 1/2 cup diced carrots
  • 1/2 cup sliced green onions
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Fresh cilantro for garnish

Instructions

  1. Cook the udon noodles according to package instructions. Drain and set aside.
  2. In a large pot, heat sesame oil over medium heat.
  3. Add mushrooms, carrots, and bok choy. Sauté for 5 minutes.
  4. Pour in vegetable broth and bring to a boil.
  5. Add soy sauce and cooked udon noodles. Stir to combine.
  6. Simmer for another 5 minutes.
  7. Serve hot, garnished with green onions and cilantro.

Notes

  • You can substitute any vegetables you have on hand.
  • For gluten-free, use rice noodles instead of udon.
